Meals in Minutes- Pasta/Vegetarian

Whole Grain Linguine w/Edemame, Pinach & Feta
Number of servings: 9
2 tsp Olive oil
3/4 c Sliced onion
1 c Frozen shelled edemame beans
3/4 c Water
3/4 tsp Italian seasoning
1/8 tsp Black pepper
6 oz Fresh spinach, torn into small pieces (about 8 cups) and rinsed
4 oz Uncooked whole grain linguine, broken in half
3/4c (3oz) Crumbled feta cheese
Coat large skillet with nonstick cooking. Heat oil over medium high heat. Add onion; cook, stirring occasionally, 4 minutes or until lightly browned. Add edemame, water, Italian seasoning and pepper: stir to combine. Cover, reduce hat and simmer gently 7 minutes. Add spinach with water clinging to leaves; cover and cook 8 minutes or until spinach is tender. Meanwhile, cook linguine according to package directions. Drain, reserving 1/4 cup water. Transfer pasta to a large bowl; add spinach mixture, feta cheese and 1/4 cup pasta water. Toss to combine.
