Tuna Steak
with Pineapple & Tomato Salsa
1 Medium tomato, chopped
1 can (8oz) Pineapple tidbits in juice, drained
1 Jalapeno pepper, seeded and minced, if desired
2T Chopped fresh cilantro
1 T Minced red onion
1/2 tsp Grated lime zest
2 tsp Lime juice
4 Tuna steaks (4oz each)
1/2 tsp Salt
1/8 tsp Black pepper
2 tsp Olive oil
Per Serving (1 tuna steak and scant 1/2 cup salsa):

To make salsa, combine tomato, pineapple, jalapeno, if using, cilantro, onion, lime zest and lime juice in medium bowl. Sprinkle tuna with salt and pepper. Heat oil in large nonstick skillet over medium high heat. Add tuna and cook 2-3 minutes on each side for medium-rare or desired degree of doneness. (Meat thermometer should register 145 degrees F.) Serve with salsa.
