Taco-Topped Potatoes

White potatoes (about 6 oz each)
scrubbed and pierced with a fork 8 oz
Extra lean ground beef 1/2 Package;
40% less sodium taco seasoning mix
1/2 c Water
1c Diced tomatoes
2 c Shredded greens
1/2 c Shredded, reduced fat cheddar cheese
1/4 c Finely chopped green onions Condiments if desired:
Salsa, low-fat sour cream

Place potatoes in microwave and cook on high for 10-12 minutes, or until fork tender. Meanwhile, place a medium nonstick skillet over medium high heat. Spray with nonstick cooking spray. Add beef, cook until browned, stirring frequently. Add mix and water, stir. Cook 1 minute, remove from heat. Split potatoes in almost half, fluff with a fork. Fill with equal amounts of beef mixture (about 1/3 cup). Top with equal amounts of remaining ingredients in the order listed. Top with condiments, if desired.
