Meals in Minutes-Chicken/Salad

2 T Low fat mayonnaise
2 T Low fat sour cream
1 T Frozen orange juice concentrate, thawed
1 tsp Grated orange peel
2 c Cooked chicken breast, diced
1 Kiwi, halved and thinly sliced
1- 11oz Can mandarin oranges, drained
1/2 c Finely chopped celery
8 Romaine leaves, washed
1/2 c Coarsely chopped cashew

Combine mayonnaise, sour cream, concentrate, and peel in a small bowl. Add chicken, kiwi, oranges and celery; toss to coat. Serve on romaine. Top with cashews. Garnish with orange zest, if desired.
