Meals in Minutes- Fish

Skillet Salmon
w/ Dill Cream Sauce
Number of servings: 4
1 T Canola oil
1 lb Salmon, cut into 4 fillets, rinsed and patted dry
3/4 c Skim milk
4 oz Reduced fat cream cheese
1/2 c Chopped cucumber
2 T Chopped fresh dill or 1 tsp dried dill
1/4 tsp Sea salt
1/4 tsp Pepper

In a large skillet, heat the oil over medium high heat. Add salmon, flesh side down, cook 5 minutes. Turn, cook another 3-5 minutes, or until salmon is cooked through. (Internal temp should be at least 145 degrees). Remove from skillet, cover to keep warm. Reduce heat to low. Add the milk and cream cheese to the skillet; cook and stir until smooth. Stir in cucumber, dill, salt and pepper. Cook about 2 minutes or until heated through. Serve salmon topped with cream sauce.
