Shrimp & Snow Peas in Orange Sauce
4 Scallions, thinly sliced
1 T Peeled, minced fresh ginger
1 T Finely grated orange zest
2 Garlic cloves, minced, or 2 1/2 tsp minced garlic
3 c Snow peas
16 oz Pkg cooked tail-off shrimp
3 c Bean sprouts
1/2 c Orange juice (fresh squeezed preferred)
2 T Low sodium soy sauce
1 1/2 tsp Honey
1 1/2 tsp Cornstarch
1 1/2 T Rice vinegar

Coat a large nonstick wok or sauté pan with cooking spray. Heat pan over high heat to smoking. Add scallions, ginger, orange zest and garlic, stir-fry for 30 seconds. Add snow peas. Continue tossing until crisp tender, about 2 minutes. Add shrimp, continue tossing about 2 minutes. Add sprouts, orange juice, soy sauce, and honey. Toss until bubbling, about 1 minute. Whisk cornstarch with rice vinegar in a small bowl. Add to other ingredients, continue cooking until sauce has thickened, about 30 seconds.
