Shrimp &
Asparagus Pasta
13.25 oz Whole grain linguine
2 T Extra virgin olive oil
1 T Minced garlic
1 lb Frozen cooked shrimp, tail off, thawed and rinsed
1/2 lb Fresh asparagus, trimmed, cut into thirds
1/2 tsp Sea salt
1/4 tsp White pepper
1 c Fat free half and half
1 Medium tomato, diced
2 T Fresh basil, chopped
1/2 c Parmesan cheese, finely shredded

Prepare pasta according to package directions. Meanwhile, in a large skillet, heat olive oil over medium high heat. Add garlic, shrimp, asparagus, salt and white pepper. Sauté until the asparagus is tender, about 5 minutes. Stir in fat-free half and half, bring to a boil. Reduce heat to low, simmer 4 minutes. Stir in tomatoes, basil and pasta; toss to coat pastas. Serve with Parmesan cheese.
