Shrimp w/Cornmeal, Asparagus & Cherry Tomatoes Cod
1 lb Asparagus, diced
1 lb Raw shrimp, peeled and de-veined, tails removed and rinsed
2 c Water, divided
1/2 c Yellow corn meal
2 T Olive oil
10.5 oz Cherry tomatoes, halved
1/4 c Parmesan cheese, grated

Preheat grill or broiler to medium-high heat. Heat medium saucepan of water to boil over high heat. Add diced asparagus. Cook until tender. Drain. Grill or broil shrimp until pink, about 3 minutes, set aside. To prepare cornmeal; bring 1 1/2 cups water to boil. Combine 1/2 cup water with 1/2 cup cornmeal Add slowly to boiling water, stirring constantly. Cook over low heat until thickened. Remove from heat. Add olive oil, tomatoes, Parmesan cheese and cooked asparagus to corn meal. Stir to combine. Put back on low heat to warm all ingredients through. Mound 1 cup of cornmeal mixture onto each plate. Place 6 shrimp around the edge of each plate. Add additional Parmesan cheese if desired at the table.
