Sesame Chicken Salad Wonton Cups
12 (3 inch) Wonton wrappers
1 T Sesame seeds
2 c Water
8 oz Boneless, skinless chicken breasts
1 c Fresh green beans, cut diagonally into 1/2" pieces
1/4 c Reduced fat mayonnaise
1 T Fresh cilantro, chopped
2 tsp Honey
1 tsp Reduced sodium soy sauce
1/8 tsp Ground red pepper

Preheat oven to 350˚. Spray 12 muffin cups with nonstick cooking spray. Press 1 wonton wrapper into each muffin cup. Bake 8-10 minutes or until golden brown. Cool on wire rack before filling. Place sesame seeds in shallow baking pan. Bake 5 minutes or until lightly toasted, stirring occasionally. Cool. Meanwhile, bring water to a boil in a medium saucepan, add chicken reduce heat to medium low. Cover; simmer 10 minutes or until chicken reaches an internal temperature of 165˚. Add green beans cook 7 minutes. Drain, chop chicken into small pieces. Combine chicken, green beans and remaining ingredients in a medium bowl; mix lightly. Spoon into wonton cups.
