Meals in Minutes- Turkey

Sausage & Black -Eyed Pea Hash
Number of servings: 4
8-oz Diced turkey andouille sausage
1 c Diced celery (about 2 stalks)
1 c Chopped fresh tomato
1Medium red bell pepper, cubed
1 Medium yellow squash, cubed
1/4 c Water
2 tsp Chopped fresh thyme
2 tsp Cider vinegar
2 tsp Worcestershire sauce
2 tsp Dijon mustard
1 15-oz can Unsalted black-eyed peas, rinsed and drained
1 T Canola oil
4 Large eggs
Black pepper to taste
Chopped fresh thyme (optional)
Per Serving (1c pea mixture+ 1 egg):

Fat: 11 grams

Heat large nonstick skillet over med-high heat.  Add sausage, saute 4 min or until lightly browned, stirring occasionally.  Add celery and next 3 ingredients, saute 3 min stirring frequently.  Add water and next 5 ingredients. Simmer 2 min or until peas are thoroughly heated.  Remove pea mixture from pan; keep warm.  Wipe pan with paper towel.  Return to med heat.  Add oil, swirl.  Crack eggs, cook until whites are set, about 4 minutes.  Remove from heat. Place approximately 1 cup of the pea mixture on each of the 4 plates; top with egg.  Add pepper to taste.  Top with thyme if desired.
