Rosemary Pork Chop
& Apple Relish
1 T Olive oil
4 Pork loin boneless pork chops (4 oz each)
3/4 tsp Dried rosemary
Fresh ground pepper to taste
3 Diced apples
1 1/2 tsp Butter
1/4 c Apple juice or cider
2 T Teriyaki sauce
2 tsp Brown sugar
2 tsp Lemon juice
1/2 c Raisins
2 tsp Ground cinnamon

Heat a large skillet over medium-high heat; add olive oil, swirl to coat. Season pork with pepper & rosemary. Sear 1 minute per side. Lower heat to medium-low, cook 2-3 minutes per side, depending on thickness of chops. Move to plate- cover to keep warm. Wipe out skillet with paper towel and set heat to medium. Add butter, diced apples; sauté for 1 minute. Stir in teriyaki sauce, apple juice/cider, sugar, lemon juice, raisins, cinnamon; simmer 2-3 minutes until apples are tender and liquid thickens. Return chops to pan for 1 minute to heat through.
