Quinoa Salad

1 c Uncooked quinoa
1 c Chopped red cabbage
1 c Shelled edamame, frozen and thawed
1 c Chopped red bell pepper (about 1 medium)
1 c Shredded carrots
1 c Chopped cucumber, seeded if desired
2 T Chopped fresh dill weed
Dressing and Garnishes
1/3 c Olive or canola oil
1/4 c Tamari soy sauce
1/4 c Red wine vinegar
2 tsp Honey
1 tsp Fresh lemon juice
8 c Salad greens
1/2 c Roasted and salted sunflower seeds

Cook quinoa according to package directions; rinse in cool water and drain well. Meanwhile, mix all of the remaining salad ingredients in a large bowl. Stir in cooked quinoa.

Dressing: Whisk oil, tamari, vinegar, honey and lemon juice together in a small bowl. Stir half of the dressing into the salad mixture; toss to coat all the ingredients. Spoon salad onto greens; drizzle with remaining dressing and garnish with sunflower seeds.
