Quick Beef and
Pinto Bean Chili
1 Garlic clove, minced
1 14oz Pkg frozen peppers & onions, or blend of your choice
1 lb Extra lean ground beef
*1 14.5 oz Can diced tomatoes with green chilies
1 14.5 oz Can crushed tomatoes
2 tsp Chili powder
1/4 tsp Dried oregano
1/2 tsp Black pepper
1 15 oz Can pinto beans, drained & rinsed
1 11.5 oz Can low sodium v 8 juice

Coat a large skillet with cooking spray, heat over medium high heat. Add garlic and frozen vegetables; cook, stirring occasionally, about 3 minutes. Add beef, cook, stirring frequently until browned. Add diced tomatoes, crushed tomatoes, seasonings, beans and juice. Cook over medium high heat, stirring occasionally until all ingredients are warmed through, about 3 minutes.

*If a less spicy chili is desired, use plain diced tomatoes, then increase chili powder to achieve desired flavor.
