Pork Chops with
Roasted Apples & Onions
Number of servings: 4
2 1/2 tsp Canola oil, divided
1-1/2 c Frozen pearl onions
2 c Gala apple wedges
1 T Butter, divided
2 tsp Fresh thyme leaves
1/2 tsp Kosher salt, divided
1/2 tsp Black pepper, divided
4 (6 oz) Bone-in center-cut pork chops (about 1/2" thick)
1/2 c Fat free, lower sodium chicken broth
1/2 tsp All purposed flour
1 tsp Cider vinegar

Preheat oven to 400˚.  Heat large ovenproof skillet over med high heat.  Add 1 tsp oil to pan; swirl. Pat onions dry with paper towel.  Add onions to pan; cook 2 min or until lightly browned, stirring once.  Add apples, place in oven.  Bake 10 min or until onions and apples are tender. Stir in 2 tsp butter, thyme, 1/4 tsp salt and 1/4 tsp pepper.  Heat a large skillet over med high heat.  Add remaining oil, swirl. Add pork, season with remaining salt and pepper.  Cook 3 min per side or until desired degree of doneness is achieved. Remove from pan.  Combine broth and flour in a small bowl. Whisk.  Add broth mixture to pan, scraping pan to loosen brown bits.  Cook 1 min or until reduced to 1/4 cup.  Stir in vinegar and remaining 1 T butter.  Serve sauce with pork and apples mixture.
