Oven-Fried Parmesan Chicken
4 (4oz) Boneless, skinless chicken breast halves, flattened to uniform thickness
1 c Plain non-fat yogurt
3/4 c Plain bread crumbs
4 T Parmesan cheese
2 T Flour
1 tsp Paprika Pinch of cayenne pepper

Place chicken breast halves in yogurt and refrigerate. Combine other ingredients in a mixing bowl. Preheat oven to 425˚. Spray cookie sheet with nonstick spray. Coat each piece of chicken well with yogurt and dip in crumb mixture, pressing down both sides and turning over several times to get a thick coat of crumbs. Place chicken on cookie sheet, bake about 20 minutes or until internal temperature of 165˚ is reached..
