1t extra-virgin olive oil
1-pound ground turkey
1 medium green bell pepper, diced
1 medium sweet onion, diced
3 Roma tomatoes, diced
8-oz whole wheat elbow macaroni, cooked according to package directions
1 can kidney beans, rinsed and drained
1 can black beans, rinsed and drained
2 t cumin
2 t chili powder
1/2 c Salsa
*Additions-feel free to top off skillet upon serving with Mexican cheese, avocado, or sour cream.
Heat oil in nonstick skillet over medium-high heat: add turkey and onion. Cook 10 minutes or until no longer pink. Add veggie mixture, noodles, beans, cumin, chili powder and salt to skillet and let simmer for 15 minutes.
