Meatball Soup

Meatballs:
1/2 c Dried bread crumbs
1/4 c Parmesan cheese, grated
2 T Chopped onion
1/2 tsp Minced garlic
1 T Dried parsley flakes
1 tsp Dried basil
1/2 tsp Pepper
1 Egg, beaten
1 lb Extra lean ground turkey

Meatballs- combine all ingredients except ground turkey. Add turkey, mix thoroughly. Shape into 2” balls. Heat a skillet coated with non-stick spray, with small amount of water added. Place the meatballs in skillet and cook over medium low heat 8-10 minutes. Turn often so they brown evenly. Soup- heat oil in large saucepan or soup pot. Add onions, celery, and garlic. Cook vegetables about 5 minutes, stirring occasionally. Add chicken broth, tomatoes and spices. Bring soup to boil, simmer, add pasta. Continue to simmer until pasta is almost cooked, then transfer meatballs to the pot and simmer gently for 3 minutes more.
