Meals in Minutes- Chicken/Salad

Mango Salad with
Grilled Chicken
1 T Olive oil
1 1/2 lb Boneless, skinless chicken breasts
2 Ripe mangos, peeled and diced
5 oz Container mixed greens
Dressing:
2 T Rice vinegar
1 T Honey
1 T Fresh ginger, grated
1/4 tsp Sea salt
1/4 tsp Black pepper
1/4 c Extra virgin olive oil

Preheat grill or broiler. Coat chicken breasts with 1 T olive oil. Place chicken on grill or in broiler. Cook 10-12 minutes or until meat thermometer reaches 165˚, turning once. Let rest, then slice. Meanwhile, combine ingredients for dressing. Whisk well. In a large bowl combine sliced chicken, diced mangos, greens and dressing. Toss and serve.
