Meals in Minutes-Beef

Lime & Garlic Steak Fajitas
Number of servings: 8 Fajitas
2 tsp Olive oil, divided
1 Green pepper, cut into strips
1 Red pepper, cut into strips
1 Medium onion, peeped and sliced
1 lb. Beef sirloin steak, cut into strips
1 T Lime juice
1 tsp Minced garlic
8 Fat free, whole grain tortillas (8-inch)
Condiments, as desired; salsa, low-fat shredded cheese, low-fat sour cream

Heat 1 tsp oil in skillet.  Stir fry vegetables until crisp tender.  Remove; set aside.  Pour in remaining oil; stir-fry sirloin strips, lime juice and garlic until done, about 6-7 minutes.  Return vegetables, warm through.  Spoon mixture down center of the tortilla.  Add condiments, as desired.  Fold tortilla.
