Kale & Caramelized Onion Pizza w/Cauliflower Crust
Crust:
1/2 head Cauliflower, cut into chunk
1 clove Garlic, minced
1 c Part-skim mozzarella cheese
1 Egg, beaten
1 tsp Basil
1 tsp Oregano
Topping:
1 T Olive oil
1/2 large white onion, sliced thin
1 c Chopped kale
1/4 c Tomato sauce
1 c Part-skim mozzarella cheese

Preheat oven to 400˚. Grease cookie sheet or pizza stone with oil. Using food processor, process cauliflower until it achieves consistency of rice. Sauté cauliflower "rice" in a non-stick skillet over medium heat and cook until translucent, approximately 6-8 minutes. In a bowl, combine the cooked cauliflower with all remaining ingredients. Spread dough our evenly over prepared pan-about 1/4-1/3 of an inch thick. The pizza should be 9-10” in diameter. Bake for 20 minutes or until crust is golden, crispy on the edges and cooked through the middle. While crust is cooking, heat oil in medium skillet over low heat. Add onion and cook, stirring occasionally, for 10-15 minutes or until caramelized. Add kale to skillet, cook until tender and wilted. Remove from heat. Top with tomato sauce, half of cheese, kale and onions, and remaining cheese. Bake pizza for about 10 minutes, or until kale begins to crisp and cheese melts.
