Herb-Parmesan Chicken on Fresh Greens
1 Egg
1 c Panko bread crumbs
1 T Grated parmesan cheese
1/2 tsp of each: dried basil, paprika,
onion powder and garlic powder
4-4oz Boneless, skinless chicken breasts
3 T Olive oil, divided
2 T Lemon juice
1/4 tsp Sea salt
1/4 tsp Pepper
4 c Salad greens
2 c Canned garbanzo greens, drained and rinsed
1 c Grape tomatoes
1/2 c Sliced onion

Crack egg into shallow bowl and beat lightly. Mix panko crumbs, cheese and spices on a piece of waxed paper. Dip chicken breasts into egg, then crumbs to coat. Heat 1 T oil in large non-stick skillet. Add chicken and cook until golden on each side and an internal temperature of 165˚ is reached. Remove from heat.
Whisk remaining olive oil, lemon juice, salt and pepper in a medium bowl. Add salad greens, beans, tomatoes, and onion; toss to mix. Divide salad mixture on 4 plates, top with chicken.
