Meals in Minutes- Beef

Hamburger Beef Stroganoff
 1 T Olive oil
1/2 c Onions, frozen chopped
1 Garlic clove, minced
1 lb Extra lean ground beef
2 T Flour
1/4 tsp Paprika
1/4 tsp Black pepper
4-8 oz Sliced mushrooms
1- 10 3/4 oz can Healthy request cream of chicken soup
1 c Low fat sour cream or low fat plain Greek yogurt
Fresh parsley or chives

Heat oil over medium high heat in a large skillet. Add onions and garlic. Sauté until lightly browned, about 2 minutes. Add ground beef, brown into crumbles. Add the flour, spices, mushrooms; sauté 5 minutes. Add the soup, simmer uncovered 10 minutes. Stir in sour cream or Greek yogurt. Warm through. Garnish with parsley or chives. Serve over rice, riced or mashed potatoes or egg noodles.
