Grilled Salmon with
Maple Ginger Glaze
1/3 c Maple syrup
1/4 c Balsamic vinegar
1 1/2 T Fresh ginger, peeled and minced
1/2 tsp Red pepper flakes (or to taste)
6 (4oz) Salmon fillets
1 1/2 T Extra virgin olive oil

Spry grill or broiler pan with non-stick spray, preheat. In a small bowl, mix first 5 ingredients. With a pastry brush, coat both sides of salmon with olive oil. Place
salmon on grill or broiler pan (skin side up, if skin on salmon). Cook 7-8 minutes.* Turn, spoon the sauce over the cooked side of fish. Cook until the sauce has formed a glaze and salmon flakes with a fork (internal temperature of 145˚ must be reached), about 4-5 minutes.
