Meals in Minutes- Chicken

Grilled Chicken
with Strawberry & Pineapple Salsa
1 tsp Canola oil
2 Slices fresh pineapple, each 1/2 inch thick
1 c Whole strawberries (about 5oz) diced
1/4 c Finely chopped onion
3-4 T Chopped fresh mint leaves
1 tsp Sugar
1/8 tsp Crushed red pepper flakes
1 Lemon
4 Boneless, skinless chicken breast halves (4 oz each)
2 tsp Mrs. Dash seasoning
1/4 tsp Salt

Preheat grill or broiler. Brush grill or broiler with the oil. Grill or broil the pineapple for 2 minutes on each side. Transfer to a cutting board; cool, chop. Mean- while, in a medium bowl, stir together the remaining salsa ingredients, except the lemon. Grate 1 tsp lemon zest. Stir the zest and chopped pineapple into the strawberry mixture. Set aside. Sprinkle both sides of the chicken with the seasoning blend and salt. Grill or broil until internal temperature of 165˚ is reached, turning once. Transfer chicken to plates, squeeze lemon juice on the chicken. Serve with salsa on the side.
