Fresh Salmon Burgers

1 (2lb) Boneless, skinless salmon fillet (your meat cutter can skin the salmon for you)
1/2 c bread crumbs
1 Egg, lightly beaten
2 Green onions, thinly sliced
Zest of 1 lemon
2 T Finely chopped fresh chives
1 T Minced garlic
1 T Olive oil
1 tsp Red wine vinegar
1-2 Dashes Tabasco sauce
Curly green lettuce
6 Whole wheat hamburger buns
Low fat mayonnaise, if desired

Spray grill or broiler pan with nonstick spray. Preheat. Cut salmon into pieces. Place in a food processor and pulse to achieve a course texture. In a bowl, combine salmon, bread crumbs, egg, green onions, lemon zest, chives, garlic, olive oil, vinegar, and Tabasco. Form into 6 patties. Grill (medium-high heat) or broil burgers for 6-8 minutes, turning once, until an
internal temperature of 145˚ is reached. Serve in buns with lettuce. (Spread mayonnaise in buns, if desired).
