Fish Nuggets
with Homemade Tartar Sauce
1/4 c Reduced fat mayonnaise
1/4 c Light sour cream
1 T Finely chopped chives
1 T Finely chopped dill
1/2 c Flour
1/4 tsp Black pepper
2 Eggs
1 1/2 T Dijon mustard
1 1/2 c Panko bread crumbs
1 lb Cod, cut into 16 pieces

Preheat oven top 425˚. Line baking sheet with foil, spray with nonstick spray. In a small bowl, whisk together mayonnaise, sour cream, chives and dill. Cover and chill. Combine flour and pepper in a shallow dish. Whisk together eggs and mustard in another dish. Place panko crumbs in a third shallow dish. Working with one piece of fish at a time, dredge in flour mixture, dip in egg mixture and dredge in panko mixture until completely covered. Place fish on prepared pan. Bake for 15-20 minutes, turning once, until an internal temperature of 145˚ is reached. Serve with sauce.
