Meals in Minutes- Soup/Vegetarian

Easiest Ever Pumpkin Soup
Number of servings: 4-8 (makes 8 cups)
1 Medium onion, grated
2 T Olive oil
1 (29 oz) can Pure pumpkin 
2 (14.5 oz) cans Chicken broth (or 4 cups)
1/2 c Heavy cream
2 tsp Pumpkin pie spice
Salt and pepper to taste

Heat oil in a saucepan over medium high heat.  Add the onion and cook, stirring, 3 minutes or until soft. Stir in the pumpkin, broth, cream, and pumpkin pie spice.  Season with salt and pepper as desired.  Cook, stirring occasionally, 3 minutes or until soup simmers. Ladle into bowls and top as desired. May be stored in refrigerator in airtight container for up to 3 days.
