Meals in Minutes- Chicken

Creamed Chicken

3 T Margarine or butter
1/4 c Flour
2 c + 1/4 c Skim milk, divided
1/2 tsp Salt
1/4 tsp Pepper
4 c Cooked chicken, cut up
1 Egg, beaten
2 T Parsley chopped
Per Serving (1 cup):

In a large saucepan, combine margarine, flour and milk over medium-low heat. Stir until thickened. Add salt, pepper, and chicken. In a separate bowl, combine beaten egg with 1/4 c milk. Add to cream sauce. Cook 2 minutes, stirring constantly. Top with parsley. Serve over rice.
