Citrus-Cilantro Shrimp

3 Garlic cloves, minced
1/4 c Fresh lemon juice
1/4 c Fresh lime juice
1/4 c Orange marmalade
1/4 c Chopped cilantro, plus more for garnish
2T Vegetable oil, divided
1T Less sodium soy sauce
Pinch Red pepper flakes
Pinch Freshly ground black pepper
1 lb Raw shrimp in their shells (about 22-26 shrimp), peeled and deveined

In a medium bowl, whisk together the garlic, juices, marmalade, cilantro, 1 T vegetable oil, soy sauce, red pepper flakes and black pepper. Pour 1/4 cup of the mixture into a cup to serve as a dipping sauce and set aside. Add the shrimp to the bowl and turn to coat.
Marinate in the refrigerator for about 10 minutes. In a large skillet, heat the remaining oil and add the shrimp with the marinade. Cook, turning occasionally until they are opaque. Serve garnished with chopped cilantro, dipping sauce on the side.
