Chicken w/Tomatillo Salsa
2 T Olive oil
1/4 tsp Sea salt
4 Boneless skinless chicken breasts (about 1 1/4 lb)
Salsa:
1 Medium red tomato
12-15 Small tomatillos
2 T Chopped cilantro
1/4-1/2 Jalapeno pepper, deseeded
1 Garlic clove
1/4 tsp Sea salt

Heat olive oil in skillet. Season chicken with sea salt. Cook chicken over medium heat for 8-10 minutes or until an internal temperature of 165˚ is reached, turning once. While chicken is cooking, prepare salsa. Chop all ingredients and combine with salt. Serve chicken breasts with 3-4 T salsa on the side.
