Chicken Linguine &
Tomato-Basil Sauce
8 oz whole grain linguine
2 T Extra virgin olive oil, divided
1 (14.5oz) can Diced tomatoes, with juice
2 tsp Minced garlic
1/2 tsp Pepper
Dash of salt
3 T Flour
1/4 tsp Black pepper
Dash of salt
12 oz Boneless, skinless chicken breast, cut into 3"x 1" strips
3 T Fresh basil, minced

Prepare linguine according to package directions. Drain, return to pot. Add 1 T olive oil.  Meanwhile, combine tomatoes with juice, garlic, pepper and salt in a medium bowl; set aside. Next combine flour, pepper and salt in a shallow bowl. Dredge chicken strips in flour. Heat 1 T olive oil in a non-stick pan over medium high heat. Arrange the chicken strips in a single layer; cook for almost 2 minutes per side until lightly browned. Reduce heat to medium; pour the sauce over chicken. Cover and cook for about 8 minutes or until chicken is done. Add the fresh basil during the last minute.
