Chicken & Cornbread Salad with Lime
4 c Cornbread, cut into large cubes
2 T Fresh lime juice
2 T Extra virgin olive oil
1 1/2 tsp Cumin
3 (4 oz) Skinless, boneless chicken breast halves
1 1/2 c Chopped tomato
3/4 c Chopped red onion
1 Romaine heart, chopped
Salt and pepper, if desired

Preheat grill and broiler. Toast cornbread under broiler for 1-2 minutes. Whisk together lime juice, olive oil and cumin. Brush 1 tablespoon mixture on chicken, season with salt and pepper, is desired. Grill or broil 5 minutes per side or until an internal temperature of 165˚ is reached; rest and slice. Toss cornbread, tomato, onion and romaine with lime
juice mixture. Top with chicken.
