Chicken Capellini

8 oz Spaghetti
12 oz Boneless, skinless chicken breasts
1/2 .6oz pkg dry Zesty Italian salad dressing mix
2 T Red wine vinegar
2 T Olive oil, divided
2 T Water
4-5 Tomatoes, diced
1 tsp Minced garlic
2 T Fresh basil, minced or 2 tsp dried basil
Grated parmesan cheese

Preheat grill or broiler (chicken also may be cooked in skillet with marinade). Cook spaghetti according to package directions. Combine salad dressing mix, red wine vinegar, 1 T olive oil and water. Pour over chicken breasts. Set aside. In another bowl, combine diced tomatoes, garlic, 1 T olive oil and basil. Grill, broil or pan fry chicken breasts until internal temperature of
165˚ is reached, let rest, then slice into thin strips. Warm tomato mixture in the microwave. Serve chicken and tomato mixture over a bed of spaghetti. Top with grated parmesan cheese.
