6 slices Turkey bacon
5 oz Mixed greens
1 Large Granny Smith apple, diced
1/4 c Walnut halves, toasted and chopped coarsely
1/2 c Dried cranberries
2 oz Blue cheese, crumbled
1 1/2 T Apple cider vinegar
1 tsp Grated orange zest
1 T Freshly squeezed orange juice
1 1/4 tsp Dijon mustard
1 T Maple syrup
1/2 tsp Ground black pepper
2 T Olive oil

Prepare turkey bacon in microwave until crisp. Cool. In a large bowl, toss together the mixed greens, apple, walnuts, cranberries and blue cheese. For the dressing, whisk together the vinegar, orange zest, orange juice, mustard, maple syrup and pepper in a bowl. Slowly whisk in olive oil. Chop the bacon into large pieces, add to the salad. Toss salad with dressing. Serve immediately.
