Meals in Minutes- Pork/Salad

BLT Salad

Number of servings: 4
2 T Mustard
2 T Honey
1 T White or red wine vinegar
1/4 c Reduced fat mayonnaise
1 tsp Nutmeg
2 T Olive oil
Pepper to taste
1 Head iceberg lettuce
6 Slices turkey bacon, cooked crisp and crumbled
2 Tomatoes, chopped

Whisk the mustard, honey, vinegar, mayonnaise and nutmeg together in a bowl. Add the olive oil in a steady stream, whisking constantly. Season with pepper. Cut the lettuce in 4 wedges, place each on a serving plate. Cover each with the bacon and tomatoes. Drizzle
with equal amounts of the dressing.
