Meals in Minutes- Beef/Salad

Asian Beef Lettuce Wraps
Number of servings: 12
1 1/2 lb Extra lean ground beef
1/2 c Hoisin sauce
Peanut sauce (recipe below)
1 Medium cucumber, chopped
1/4 c Mint leaves, torn
12 Large lettuce leaves
Peanut Sauce
1/2 c Crunchy peanut butter
2 T Low sodium soy sauce
1 tsp Sugar
2 Drops hot pepper sauce (if desired)
1 Clove garlic, minced
1/2 c Water

Per Serving (lettuce leaf with approximately 1/2 cup filling):

Brown ground beef in large nonstick skillet over medium heat 8-10 minutes or until beef is no longer pink, breaking up into small crumbles. Stir in hoisin sauce and peanut sauce; heat through. Just before serving, add cucumber and mint, toss gently. Serve in lettuce leafs.
